5 Minute Avocado & Cilantro Lime Dressing

It’s easy to chop veggies and lettuce to recreate your favorite restaurant-quality salad, but it is NOT as easy to make your own dressing. I admit that sometimes I go to my favorite restaurants just so that I can get their dressing! Those creamy dressings that have just the right amount of tang and punch are hard to find. And when you do find one you like, you either have to order take-out from the restaurant or find a bottle in the store that is full of preservatives and other ingredients you can’t pronounce. Aye aye aye, what’s a girl to do? Enter this super easy avocado & cilantro lime dressing you can make in your own kitchen! Best of all, it takes about 5 minutes to make and you’ll have a fresh jar of creamy dressing to enjoy the entire week!

Pull out your food processor and put all of these delicious ingredients into the bowl:

1 Avocado                                                                      1 Tablespoon lime juice

2 small peeled cloves of garlic                                  1 Tablespoon lemon juice

1/2 cup loosely packed cilantro                                3 Tablespoons olive oil

1/4  cup light sour cream                                           1/2 teaspoon Kosher salt

1/4 teaspoon black pepper                                        2 Tablespoons water (plus more)

5 Minute Avocado & Cilantro Lime Dressing

Pulse all the ingredients in the food processor until they are smooth. Scrape down the sides with a spatula and then add water to reach your desired consistency. If you would like added tang, drop in a small amount of white vinegar or substitute the sour cream for plain Greek yogurt. All versions are delicious!

Viola! There is the perfect avocado & cilantro lime dressing for your salad in a matter of minutes! I prefer it on top of a bed of lettuce with my 3 Ingredient Tangy Marinated Chicken, cheese, tomatoes, and more avocados. It also goes well in shrimp or chicken tacos. Last week I paired this salad dressing with my Crockpot Enchilada Quinoa and it was a big hit! The dressing keeps well in an airtight container or mason jar for 10 days. Take a few minutes this weekend to make a batch of this dressing so that you can enjoy it throughout the week!

Ingredients
  

  • 1 avocado
  • 2 cloves garlic peeled
  • 1/2 cup loosely packed cilantro
  • 1/4 cup light sour cream
  • 1 Tbsp lime juice
  • 1 Tbsp lemon juice
  • 3 Tbsp olive oil
  • 1/2 tsp Kosher salt
  • 1/4 tsp black pepper
  • 2 Tbsp water plus extra

Instructions
 

  • Place all ingredients into food processor.
  • Blend until smooth.
  • Add more water for desired consistency.
  • Serve fresh over salad or tacos.
  • Keep in an airtight container in the refrigerator up to 10 days.
