Whisk the eggs, milk, vanilla, and cinnamon until combined and pour into a flat pie tin.
Dip a piece of bread in the egg mixture, covering both sides. Do not let it soak.
Place the bread on a griddle heated over medium heat.
Cook until lightly browned, about 1-2 minutes.
Flip and cook the other side 1-2 minutes.
Repeat these steps for all the pieces of toast.
Serve warm with your favorite toppings.
