  • 3 lbs boneless skinless chicken thighs
  • 3 cans undrained Great Northern Beans
  • 2 7 oz cans undrained diced green chiles
  • 1 large diced onion at least a cup or more
  • 1 Tbsp minced garlic
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1/4 tsp white pepper
  • 2 cups chicken broth
  • 1 Tbsp Kosher salt
  • 1 cup coconut milk
  • 1/4 cup cornstarch
  • 1/2 cup water
  • chopped cilantro and lime for topping


  • Layer the chicken in the bottom of the Crockpot.
  • Pour in all the ingredients through the coconut milk. Mix well, leaving chicken on the bottom.
  • Cook on HIGH for 5 hours.
  • Remove the chicken with a slotted spoon and shred with forks.
  • Put the shredded chicken back into the chili.
  • Make a slurry with the cornstarch and water. Pour into the chili and mix well.
  • Allow white chicken chili to cook 30 more minutes until it thickens.
  • Ladle white chicken chili into bowls and top with chopped cilantro and squeezed lime juice.
