Healthy Crockpot White Chicken Chili
Healthy Crockpot White Chicken Chili is an easy and delicious meal! It has delicious Thai flavors and one serving is less than 300 calories.
- 3 lbs boneless skinless chicken thighs
- 3 cans undrained Great Northern Beans
- 2 7 oz cans undrained diced green chiles
- 1 large diced onion at least a cup or more
- 1 Tbsp minced garlic
- 2 tsp cumin
- 1 tsp chili powder
- 1/4 tsp white pepper
- 2 cups chicken broth
- 1 Tbsp Kosher salt
- 1 cup coconut milk
- 1/4 cup cornstarch
- 1/2 cup water
- chopped cilantro and lime for topping
Layer the chicken in the bottom of the Crockpot.
Pour in all the ingredients through the coconut milk. Mix well, leaving chicken on the bottom.
Cook on HIGH for 5 hours.
Remove the chicken with a slotted spoon and shred with forks.
Put the shredded chicken back into the chili.
Make a slurry with the cornstarch and water. Pour into the chili and mix well.
Allow white chicken chili to cook 30 more minutes until it thickens.
Ladle white chicken chili into bowls and top with chopped cilantro and squeezed lime juice.
