Ingredients

Salad
  • 4 heads broccoli chopped into bite-sized pieces
  • 4 green onions diced
  • 1 cup dried cranberries
  • 1 large Granny Smith apple diced
  • 2 teaspoons lemon juice for the apple
Dressing
  • 1 cup light mayonnaise
  • 1/3 cup light sour cream or Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon white sugar
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper

Method

  1. Chop the broccoli into fork-sized pieces and put it in a large bowl with the green onions and cranberries.
  2. Dice the apple, toss it with 2 teaspoons lemon juice in a separate bowl to keep it from browning, then add it to the broccoli.
  3. In the same small bowl, whisk the mayo, sour cream, vinegar, lemon juice, sugar, poppy seeds, salt and pepper until smooth.
  4. Pour the dressing over the salad and toss thoroughly, scraping the bowl. Cover and chill at least 1 hour.

Notes

Sweet but not overpowering; even the kids go for it. Great with tangy marinated chicken.
