10-Minute Turkey Pepper Jack Paninis with Spicy Mayo

Quick turkey pepper jack paninis on ciabatta with a 3-ingredient spicy Dijon mayo, pressed until the cheese melts and finished with crisp lettuce and tomato. The best use for leftover turkey.

Ingredients
  

  • 1/4 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • hot sauce a couple of squirts; Tapatio or Tabasco
  • 2 ciabatta buns split
  • 8 oz sliced turkey deli or leftover; add more for heartier sandwiches
  • 4 slices pepper jack cheese
  • cooking spray
  • lettuce and tomato for finishing

Method
 

  1. Stir the mayo, Dijon and hot sauce together until smooth.
  2. Spread the spicy mayo generously on both halves of each ciabatta bun.
  3. Layer on the turkey and pepper jack cheese.
  4. Close the sandwiches, spray both sides with cooking spray, and press in a panini maker about 5 minutes until the cheese melts. No panini maker? Use a grill pan with a second pan pressed on top and flip once.
  5. Once cool enough to handle, open and tuck in lettuce and tomato.

Notes

Ciabatta holds up in the press without going soggy and toasts beautifully.
