Ingredients

  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 1/2 tablespoons minced garlic
  • 2 teaspoons soy sauce
  • 4-5 boneless pork chops about 1 inch thick, similar thickness
  • kosher salt and freshly ground black pepper
  • 2 tablespoons olive oil

Method

  1. Stir the honey, lemon juice, garlic and soy sauce together in a small bowl (or shake in a mason jar).
  2. Season both sides of the pork chops with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat for a minute. Sear the chops 3-4 minutes on the first side, flip and sear 3 minutes more.
  4. Reduce the heat to medium-low and add the glaze, scraping up the browned bits. Cook 4-5 minutes until the chops reach 145°F (pull them around 135°F; they finish cooking as they rest).
  5. Remove the chops and let the glaze simmer until it thickens to a maple-syrup consistency. Pour over the chops or serve on the side.

Notes

Pork overcooks easily, so watch the clock and the thermometer. Great with roasted asparagus or red potatoes.
