Grilled Tangy Marinated Chicken in a Clear Glass Dish

3-Ingredient Tangy Marinated Chicken

The simplest grilled chicken: breasts marinated in lime juice, kosher salt and pepper, grilled hot for crispy, charred outsides and juicy insides. Versatile enough for salads, wraps, tacos and pasta.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3/4 cup lime juice more for extra-large breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper

Method

  1. Put the chicken, lime juice, salt and pepper in a gallon zip-top bag, seal and massage until coated. Marinate at least 30 minutes and let the chicken come to room temperature before grilling.
  2. Heat the grill to medium-high, hot enough that the chicken sizzles loudly when it hits the grate.
  3. Grill about 10 minutes on the first side for good char marks, then flip and grill another 10 minutes, adjusting for thickness.
  4. Pull the chicken at 160°F and rest 10 minutes (it rises to 165°F). It should feel firm but compressible, like the fleshy part of your hand between thumb and palm.

Notes

The lime acid crisps the outside so the juices stay in. Slice it over a Greek pasta salad or use in roll-ups.
