30-Minute Apple Cider Pork Chops

Fall-flavored pork chops in 30 minutes: seared chops finished in a sweet-tangy apple cider sauce with shallots, sage, Dijon, maple syrup, golden raisins and butter. The sauce (from Cooking Light) also suits turkey and salmon.

Ingredients
  

Apple cider sauce
  • 1/3 cup shallots chopped
  • 1-2 tablespoons fresh sage chopped
  • 1 cup chicken stock
  • 1/2 cup apple cider
  • 1 tablespoon white wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons maple syrup
  • 2 teaspoons cornstarch
  • 2 teaspoons olive oil
  • 1/2 cup golden raisins
  • 1 tablespoon butter
  • 1/2 teaspoon pepper
  • 1 dash kosher salt
Pork chops
  • 6 pork chops
  • 1-2 tablespoons olive oil

Method
 

  1. Chop the shallots and sage. Whisk the chicken stock, apple cider, vinegar, Dijon, maple syrup and cornstarch in a small bowl.
  2. Sauté the shallots and sage in 2 teaspoons of olive oil in a large sauté pan over medium heat about 2 minutes, until fragrant.
  3. Pour in the cider mixture and bring to a boil. Reduce to low, add the golden raisins and whisk about 2 minutes until it thickens. Stir in the butter, pepper and salt. Pour into a bowl and set aside.
  4. In the same pan, heat 1-2 tablespoons of olive oil over medium-high heat. Add the pork chops in a single layer and cook about 3 minutes per side until nicely browned; thicker chops should reach 145°F.
  5. Turn the heat to low, return the sauce to the pan and warm a few minutes, spooning it over the chops.

Notes

Golden raisins bring color and a sweetness that balances the mustard and vinegar. Try the sauce on a Tuscan roasted turkey at Thanksgiving.
