Ingredients

  • 15 oz black beans 1 can, mostly drained
  • 15 oz pinto beans 1 can, mostly drained
  • 1 cup shredded sharp cheddar cheese plus extra for the top
  • 1 tablespoon cumin
  • garlic powder or cayenne optional, for extra kick

Method

  1. Drain most of the liquid from both cans of beans and pour them into a medium saucepan. Mash with a bean or potato masher until mostly smooth with a few chunks.
  2. Mix in the cheddar and cumin (plus garlic powder or cayenne if you like). Warm over medium heat, stirring, until the cheese melts into a creamy mixture.
  3. Transfer to a serving dish, sprinkle extra cheddar on top and serve warm with chips, or spoon into tortillas.

Notes

Leave a little liquid in the cans so the dip is not dry, but drain most of it so it is not watery.
