Ingredients

  • 16 oz French dressing it must be French dressing
  • 1 jar apricot preserves about 12 oz
  • 1 packet onion soup mix
  • 8 boneless, skinless chicken thighs about 2 1/2 lb; as many as fit in a 13x9 pan
  • cooked rice for serving

Method

  1. Preheat the oven to 350°F. In a bowl, combine the French dressing and apricot preserves.
  2. Add the packet of onion soup mix and whisk until smooth and well combined.
  3. Spread some of the sauce over the bottom of a 13x9 glass pan and arrange the chicken thighs on top in a single layer.
  4. Pour the rest of the sauce over the chicken so it is completely covered. Cover with foil and bake 45 minutes to 1 hour, uncovering for the last few minutes so the top crisps and caramelizes.
  5. Serve over rice to soak up the sauce.

Notes

Stick with apricot preserves (orange marmalade is only okay) and thighs rather than breasts, which are too thick for this.
