Apple Blue Cheese Salad

A quick 8-ingredient apple blue cheese salad: crisp lettuce, sweet Gala or Fuji apple and green onions tossed in a simple Dijon vinaigrette and topped with crumbled blue cheese. Ready in 15 minutes.

Ingredients
  

  • 1 head lettuce romaine, spring mix or a blend, chopped
  • 1 sweet apple Gala or Fuji, cored and chopped
  • 4 green onions sliced
  • 3 tablespoons olive oil extra light or extra virgin
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons sugar
  • salt and freshly ground pepper to taste
  • 3-4 oz crumbled blue cheese

Method
 

  1. Chop the lettuce into bite-sized pieces and place it in a large salad bowl.
  2. Core and chop the apple into small bite-sized pieces and add to the bowl. Slice the green onions and toss them in too.
  3. In a medium bowl, whisk together the olive oil, Dijon mustard and sugar. Season with salt and pepper and mix until well combined.
  4. Pour the dressing over the lettuce and apple mixture and toss. If making ahead for a party, keep the dressing and blue cheese separate until just before serving so the lettuce stays crisp.
  5. Just before serving, sprinkle the crumbled blue cheese over the salad.

Notes

Avoid green apples (too tart) and soft red apples (grainy). Regular yellow mustard works in place of Dijon but is a little more tart.
