Avocado Salad with Cilantro Lime Dressing

A zesty 5-minute avocado salad: romaine, tomato, creamy avocado slivers, cucumber, fresh cilantro and toasted pepitas with a creamy homemade cilantro lime dressing. Add Cotija or goat cheese, grilled chicken or shrimp to make it a meal.

Ingredients
  

  • 1 small head romaine lettuce chopped
  • 1 large tomato diced
  • 2 ripe avocados cut in slivers
  • 1 cucumber peeled and chopped
  • 1 bunch cilantro stems removed, minced
  • 1/4 cup toasted pepitas
  • 1/2 cup cilantro lime dressing see the 5-minute avocado cilantro lime dressing recipe
  • Cotija or goat cheese optional
  • grilled chicken or shrimp optional

Method
 

  1. Make the cilantro lime dressing in a food processor (about 5 minutes; it keeps up to 10 days in the fridge).
  2. Put the romaine, tomato, avocado, cucumber, cilantro and pepitas in a large bowl and toss.
  3. Divide into bowls, sprinkle with cheese if using, and top with the dressing. Add grilled chicken or shrimp for a heartier meal.

Notes

The dressing doubles as a veggie dip or a marinade for grilled meats.
