Ingredients

  • 2 pounds bone-in, skin-on chicken thighs about 5-6 pieces; drumsticks or wings also work, not breasts
  • 1/4 cup balsamic vinegar good quality
  • 2 1/2 tablespoons soy sauce
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1/2 tablespoon minced garlic

Method

  1. Heat the oven to 350°F and line a 13x9 baking pan with foil or parchment.
  2. Place the chicken thighs skin-side down with a little space between each piece (crowding keeps the sauce from thickening).
  3. Whisk together the balsamic vinegar, soy sauce, honey, brown sugar and garlic until evenly combined, and pour over the chicken.
  4. Bake 30 minutes. Flip the thighs, spoon the sauce over the top and bake another 20 minutes, until the sauce has thickened.
  5. Rest 5-10 minutes, then serve with some of the balsamic sauce spooned over the top.

Notes

Chicken breasts release too much liquid and water down the sauce, so stick with thighs, drumsticks or wings. Use your largest dish if cooking more than 6 pieces.
