Cilantro Lime Salsa in a Bowl with Chips on the Side

Cilantro Lime Salsa

Fresh California-style cilantro lime salsa with 8 ingredients: ripe tomato, sweet onion, jalapeños, lots of cilantro, red wine vinegar, lime juice, salt and pepper, pulsed chunky in the food processor. Nothing like the jar.

Ingredients

  • 1 large ripe tomato diced
  • 1 sweet onion diced
  • 2 jalapeños seeded; add seeds back for heat
  • 1 bunch cilantro leaves only, stems removed
  • 1 tablespoon red wine vinegar
  • 2 tablespoons lime juice
  • 1/2 teaspoon kosher salt a hefty sprinkle
  • 1/4 teaspoon cracked pepper

Method

  1. Dice the tomato and onion. Seed the jalapeños, saving a few seeds if you want heat (and keep your fingers away from your eyes).
  2. Pull the cilantro leaves from the stems; stems make the salsa bitter.
  3. Put everything in a food processor with the vinegar, lime juice, salt and pepper.
  4. Pulse just a few times so the salsa stays chunky, not pureed. Taste and adjust.

Notes

Add a few jalapeño seeds for the kids' batch and a small bundle for your own. Keeps a few days in the fridge.
