Servings: 20 poppers
Course: Appetizer
Cuisine: Mexican

Ingredients

  • 8 oz cream cheese softened
  • 1/4 cup fresh chives minced
  • 1/4 cup shredded sharp cheddar cheese
  • 3/4 teaspoon garlic powder
  • 10 jalapeños halved lengthwise, seeds and veins removed
  • 10 slices thick-cut bacon cut in half
  • 20 toothpicks

Method

  1. Mix the cream cheese, chives, cheddar and garlic powder, mashing with the back of a fork until evenly combined.
  2. Cut the jalapeños in half lengthwise and scrape out the seeds and veins with a spoon (leave a few seeds for extra heat). Use a spoon, not your fingers.
  3. Stuff each jalapeño half with a scoop of the cream cheese mixture.
  4. Wrap each popper with half a slice of thick-cut bacon and secure with a toothpick poked through the side of the jalapeño (not the cheese) so it is easy to flip.
  5. Cook in a large frying pan over medium heat about 5-6 minutes per side, until the bacon is browned and crispy. A splatter screen helps.
  6. Drain on paper towels and let cool a minute before serving.

Notes

The heat lives in the seeds and veins: scrape them all out for mild poppers or leave some in for a kick.
