Ingredients

  • 4 cups peeled, sliced peaches about 8 peaches; or drained canned, or thawed and patted-dry frozen
  • 1/2 cup flour
  • 1/2 cup brown sugar packed
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup butter 1 stick, cold
  • 1 cup quick-cooking oats

Method

  1. Preheat the oven to 350°F. Pour the peaches into a greased 8x8 glass pan.
  2. In a small bowl, whisk together the flour, brown sugar, cinnamon and salt until uniform.
  3. Cut in the butter with a pastry cutter (or your hands) until the mixture is as crumbly as possible, then gently mix in the oats.
  4. Spread the oat mixture evenly over the peaches, edge to edge, and pat down lightly. Bake 30 minutes, until the top is golden brown.

Notes

Peeling the peaches is the most time-consuming part; canned or frozen peaches make it faster. Serve warm with ice cream.
