Easy No-Bake Strawberry Cheesecake

A light no-bake strawberry cheesecake: cream cheese whipped with sugar, vanilla and Greek yogurt, folded with whipped topping, poured into a strawberry-lined graham cracker crust and chilled, then topped with fresh halved berries.

Chill Time 4 hours
Total Time 4 hours 20 minutes
Servings: 8 slices
Course: Dessert
Cuisine: American

Ingredients

  • 8 oz reduced-fat cream cheese softened
  • 1/3 cup sugar
  • 2 teaspoons vanilla extract
  • 1 cup vanilla Greek yogurt
  • 8 oz whipped topping regular, not reduced-fat
  • 1 graham cracker crust store-bought or homemade
  • 1 pound fresh strawberries hulled; some sliced for lining, the rest halved for the top

Method

  1. Whip the cream cheese, vanilla and Greek yogurt, slowly adding the sugar last, until smooth.
  2. Fold in the whipped topping.
  3. Line the graham cracker crust with sliced strawberries and pour in the filling.
  4. Chill in the refrigerator for the full 4 hours so the filling sets.
  5. Decorate the top with halved strawberries, cut side up, tips pointing the same direction. Keep refrigerated until serving.

Notes

Reduced-fat whipped topping will not hold its shape. For a patriotic version, alternate blueberries on top. The homemade graham cracker crust from the Kiwi Lime Pie post is worth the extra 15-20 minutes.
