Ingredients

  • 3 tablespoons butter room temperature, cut into small pieces
  • 14 oz sweetened condensed milk 1 can; non-fat works too
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 2 cups bittersweet dark chocolate morsels 60%+ cacao
  • 1/2 teaspoon kosher salt for sprinkling, or to taste

Method

  1. Put the butter pieces in a medium glass bowl. Add the sweetened condensed milk, cinnamon and vanilla.
  2. Add the chocolate morsels. Set the bowl over a saucepan of simmering water and heat slowly over the steam (direct heat can burn it).
  3. Stir gently and steadily with a spatula until the mixture is silky, shiny, smooth and lump-free.
  4. Line an 8x8 glass pan with parchment, spray it, and pour in the fudge, leaving parchment hanging over the sides. Smooth the top and press into the corners. Sprinkle with kosher salt.
  5. Refrigerate at least 2 hours. Lift out by the parchment and cut into squares.

Notes

Store-brand dark chocolate morsels work just as well as Ghirardelli at half the price.
