Ingredients

  • 10 oz frozen chopped spinach thawed, rinsed and squeezed dry
  • 1 pound ground turkey
  • 1 tablespoon minced garlic
  • 1 egg
  • 1/3 cup breadcrumbs
  • 1/2 cup yellow onion diced
  • 5 oz crumbled feta cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground pepper
  • 1/4 cup ketchup plus 2 tablespoons for the top
  • 1 teaspoon Worcestershire sauce

Method

  1. Thaw the frozen spinach, rinse under cold water and squeeze out as much liquid as possible with your hands.
  2. In a large bowl, combine the spinach with the ground turkey and minced garlic. Add the egg and breadcrumbs to bind, then the diced onion and feta.
  3. Add the oregano, parsley, salt, pepper, 1/4 cup ketchup and Worcestershire sauce. Mix everything together with your hands and form into a loaf.
  4. Line a 13x9 glass pan with foil, covering the bottom and sides, and spray generously with cooking spray.
  5. Transfer the loaf to the pan and spread 2 tablespoons of ketchup over the top (tomato sauce works too).
  6. Bake at 400°F, covered, for 35 minutes. Uncover and bake another 10-15 minutes.

Notes

Serve with a vegetable salad with Italian basil dressing or a pecan and goat cheese strawberry salad.
