Green Chile Cheese Quiche

A crustless green chile cheese quiche that works for breakfast or dinner: 10 eggs with cottage cheese, Colby Jack, chopped green chiles and onion, baked in a 13x9 pan until puffed and golden. Use two pie crusts if you prefer a crust.

Ingredients
  

  • 10 eggs
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 8 oz chopped green chiles 1 can
  • 2 cups fat-free cottage cheese
  • 16 oz shredded Colby Jack cheese or mozzarella
  • 1/2 cup white onion chopped

Method
 

  1. Beat the eggs in a large bowl until smooth. Gently whisk in the flour, salt and baking powder.
  2. Stir in the green chiles and cottage cheese.
  3. Mix in the Colby Jack and onion until well combined.
  4. Pour into a greased 13x9 glass pan and spread evenly (or divide between 2 deep-dish pie crusts).
  5. Bake at 400°F for 15 minutes, then reduce to 350°F and bake 35-40 minutes more. Let sit a few minutes to firm up before cutting into squares.

Notes

Great with salsa or pico de gallo on top. Reheats well for weekday breakfasts.
