Lawry's Grilled Steak

A 2.5-pound grilled steak marinated in a Lawry's seasoning packet, grilled hot over medium-high flame and flipped only once, pulled at 125°F and rested under foil, then sliced against the grain for juicy, flavorful bites.

Ingredients
  

  • 2 1/2 pounds steak tri-tip or another thick cut
  • 1 packet Lawry's marinade seasoning mix
  • 1 cup water

Method
 

  1. Mix the Lawry's packet with the water until well blended. Marinate the steak at least 1 hour (the packet says 30 minutes; longer is better). Save a little marinade and heat it in the microwave later as a dipping sauce.
  2. Preheat the grill to medium-high. Place the steak on the grill and cook the first side 15-20 minutes without moving it.
  3. Flip once (if there are no char marks, your flame needs to be hotter), return it to the same spot and grill another 10-15 minutes. Pull it when a digital thermometer reads 125°F.
  4. Rest the steak at least 10 minutes in a glass dish covered with foil; it keeps cooking as it rests.
  5. Slice against the grain, turning the steak 90 degrees to the muscle fibers, so every bite is tender and juicy.

Notes

Grilling time varies with thickness; a thermometer is the surest guide. Lawry's packets are easiest to find in California and some Tennessee Krogers, or online.
