Ingredients

  • 2 eggs
  • 3/4 cup peanut butter creamy or chunky
  • 1 cup brown sugar packed
  • 2 cups baking mix such as Bisquick
  • 1 cup M&Ms any color; peanut M&Ms work too
  • chocolate chips optional

Method

  1. Heat the oven to 325°F. Spray an 8x8 glass pan (or line with parchment with an overhang for easy lifting).
  2. Mix the eggs and peanut butter in a bowl. Add the brown sugar, then the baking mix.
  3. Mix, using your hands as the dough thickens, until the baking mix is fully combined and you can form a ball.
  4. Roll or pat out the dough, pour on the M&Ms (and chocolate chips if using) and press them in. Fold and knead so they are spread throughout, then press the dough into the pan. Sprinkle a few extra M&Ms on top.
  5. Bake 35-40 minutes until golden brown. Slightly underbake for soft, chewy bars.
