Ingredients

  • 4 boneless skinless chicken breasts pounded to 1/2-inch thick
  • 3/4 cup Italian breadcrumbs
  • 5 Tbsp olive oil divided
  • 1 Tbsp minced garlic
  • 24 oz spaghetti sauce 1 jar, your favorite
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup fresh basil leaves torn, divided

Method

  1. Preheat the oven to 350°F (or preheat the broiler). Dredge the pounded chicken in the breadcrumbs, pressing so they stick.
  2. Heat 2 tablespoons oil in a large oven-safe skillet over medium heat. Cook the chicken 3-4 minutes per side until browned and crispy, working in batches and adding 2 more tablespoons of oil as needed. Remove to a plate.
  3. In the same pan, heat the last tablespoon of oil and saute the garlic about 1 minute. Add the sauce, salt and pepper, bring to a boil, then simmer 5 minutes.
  4. Return the chicken to the pan, spooning sauce up the sides.
  5. Top with the mozzarella, Parmesan and about 1/2 cup of the basil. Bake 5-10 minutes (or broil 3-5 minutes) until the cheese melts.
  6. Scatter the remaining basil over the top and serve.

Notes

A splatter screen keeps the stove clean while browning. Serve with a simple salad or over pasta.
