Ingredients

  • 12-16 oz red pepper jelly 1 jar
  • 1/2 teaspoon kosher salt
  • 1/2 cup extra-strong brewed coffee brewed with double the grounds
  • 9-13 pounds spiral-sliced ham pre-cooked
  • parsley and orange slices for garnish

Method

  1. Whisk the red pepper jelly, salt and coffee until thick but smooth.
  2. Set the ham on a lifted rack in a roasting pan so air circulates underneath.
  3. Slather 1/2 cup of the glaze over the ham with a marinating brush, pushing it down between the slices.
  4. Bake at 325°F for about 90 minutes, basting with another 1/2 cup of glaze every 30 minutes (three times).
  5. Rest 10 minutes, then slice and serve with any extra glaze. Turn the ham on its widest side and garnish with parsley and oranges for a centerpiece.

Notes

Leftovers are perfect for ham and pineapple pinwheels, ham and barley soup or cheesy ham quiche.
