Ingredients

Wet Ingredients
  • 1/2 cup butter 1 stick, melted and cooled slightly
  • 2 eggs
  • 1 15 oz can cream-style sweet corn
Dry Ingredients
  • 1 1/4 cups cornmeal
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • shortening for greasing the skillet

Equipment

  • Cast iron skillet or a 9x9 glass baking pan or muffin tin
  • Two mixing bowls
  • Whisk

Method

  1. Preheat the oven to 425°F. Melt the butter in a medium bowl and let it cool slightly. Lightly beat in the eggs until smooth, then stir in the can of cream-style corn.
  2. In a separate bowl, whisk together the cornmeal, flour, sugar, baking powder, and kosher salt.
  3. Pour the wet ingredients into the dry and stir just until combined. Do not overmix; the batter will be thick.
  4. Grease a cast iron skillet well with shortening (or use a greased 9x9 glass pan or muffin tin, adjusting the time as needed).
  5. Pour the batter into the skillet and smooth the top with a spatula.
  6. Bake at 425°F for about 18 minutes, until golden brown. Let cool, then serve warm with a chunk of butter.

Notes

  • Wonderful with chili or chicken tortilla soup.
  • Leftovers: grill lightly, drizzle with maple syrup, and serve with a fried egg for breakfast.
