Ingredients

  • 1 bag premixed coleslaw about 14 oz
  • 3 celery stalks chopped
  • 1 sweet apple diced
  • 1/2 cup olive oil
  • 2 teaspoons Dijon mustard
  • 1 tablespoon sugar
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly ground pepper

Method

  1. In a large mixing bowl, combine the bag of coleslaw mix, chopped celery and diced apple.
  2. In a small bowl, combine the olive oil, Dijon mustard, sugar, apple cider vinegar, cayenne, salt and pepper.
  3. Whisk quickly until the dressing is fully emulsified, smooth and silky (a mini whisk or fork works well).
  4. Pour the dressing over the slaw and toss thoroughly with tongs so everything is coated without crushing the apples.
  5. Serve right away, or cover and refrigerate about 30 minutes to let the flavors meld.

Notes

Easy enough for a kid to make. Serve alongside crockpot baby back ribs or pile it on pulled pork sandwiches.
