7-Minute Roast Beef Tortilla Wraps

Quick roast beef tortilla wraps with a tangy horseradish-Dijon cream cheese spread, fresh spinach and sharp cheddar. Roll, chill and slice into pinwheels for lunches, easy dinners or a party platter.

Ingredients
  

  • 8 oz reduced-fat cream cheese softened
  • 1 1/2 tablespoons prepared horseradish
  • 1 1/2 tablespoons Dijon mustard
  • 6 burrito-size flour tortillas
  • 2 cups fresh spinach leaves
  • 24 slices deli roast beef thinly sliced, 4 per wrap (about 3/4 lb)
  • 1 cup shredded sharp cheddar cheese a handful per wrap

Method
 

  1. Mix the softened cream cheese with the horseradish and Dijon mustard until creamy, smooth and well combined.
  2. Spread a heaping tablespoon of the cream cheese mixture over each tortilla. Layer on fresh spinach leaves, 4 thin slices of roast beef and a handful of shredded cheddar.
  3. Roll each tortilla up tightly, then wrap it in a sheet of foil. Refrigerate for a while so the wraps hold their shape and slice cleanly.
  4. To serve, remove the foil and cut into 1-inch pieces. Arrange on a platter with a few spinach leaves, or leave whole in the foil for packed lunches.
