Ingredients

Pizza dough (makes 2)
  • 1 1/2 cups warm water
  • 1 packet active dry yeast about 2 1/4 tsp
  • 4 cups all-purpose flour
  • 1 1/2 tsp kosher salt
  • 6 Tbsp olive oil plus a little for the bowl
Toppings
  • 2 boneless skinless chicken breasts or 2 cups shredded rotisserie chicken
  • 1 cup BBQ sauce same sauce for marinating and spreading
  • 2 cups shredded mozzarella cheese
  • 1/2 red onion thinly sliced
  • 1/4 cup fresh cilantro chopped

Method

Dough
  1. Stir the yeast into the warm water and let it activate 10 minutes.
  2. In a stand mixer with the paddle, mix the flour and salt on low. Add the olive oil 1 tablespoon at a time.
  3. Increase the speed slightly and slowly pour in the yeast water until the dough clumps. Scrape it together into a ball.
  4. Place in a lightly oiled bowl, cover, and let rise at least 1 hour.
Pizza
  1. Marinate the chicken in BBQ sauce about 30 minutes. Grill 5-7 minutes per side until it reaches 160°F (rising to 165°F as it rests), then cut into bite-size pieces. Or shred a rotisserie chicken and toss with sauce.
  2. Preheat the oven to 425°F. Divide and roll out the dough onto baking sheets or pizza pans and spread generously with BBQ sauce.
  3. Top with the chicken, then mozzarella, then red onion. Add cilantro now or after baking.
  4. Bake 12-15 minutes, until the edges are golden brown.

Notes

Using store-bought dough? Follow the package time and temperature. Do not flip the chicken too often on the grill so you get good char marks.
