Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups frozen cranberries keep frozen
  • 1 orange zested
  • 2 eggs
  • 1 cup vanilla Greek yogurt
  • 1/2 cup vegetable oil
  • 1/2 teaspoon vanilla extract

Method

  1. Mix the flour, sugar, baking powder, baking soda and salt. Add the frozen cranberries and toss to coat them in the flour mixture (frozen berries hold their shape better).
  2. Zest the whole orange into the bowl and mix.
  3. In a separate bowl, whisk the eggs, Greek yogurt, vegetable oil and vanilla until smooth.
  4. Pour the wet ingredients into the dry and mix just until no flour remains. The batter will be thick and sticky.
  5. Level the batter in a greased glass loaf pan and bake at 400°F for 65 minutes, until a knife in the center comes out clean and the edges are brown and crisp.

Notes

For muffins: 12 regular or 24 minis, baked at 400°F for 20-22 minutes. Add chopped walnuts or pecans, or white chocolate chips, for variety.
