Ingredients

  • 1.5-2 lb boneless skinless chicken breast or thighs, cut in 1-inch pieces
  • 1/2 cup honey
  • 1/4 cup reduced-sodium soy sauce
  • 1/2 cup chopped onion
  • 1 Tbsp tomato paste
  • 4 tsp cornstarch
  • 1/2 Tbsp minced garlic
  • 1/2 tsp red pepper flakes
  • cooked white or brown rice for serving
  • sesame seeds and chopped green onions for garnish

Method

  1. Cut the chicken into 1-inch pieces and spread evenly in the bottom of the Crockpot. No need to season.
  2. In a large measuring cup, whisk together the honey, soy sauce, onion, tomato paste, cornstarch, garlic and red pepper flakes, scraping up the honey at the bottom.
  3. Pour the sauce over the chicken. Cover and cook on LOW 2 1/2 to 3 hours, stirring occasionally.
  4. Spoon over rice and top with sesame seeds and green onions. Steamed broccoli makes a great side.

Notes

Double or triple for meal prep; it reheats well for lunches all week.
