French Onion Roast Beef Sandwiches

Mouthwatering 10-minute roast beef sandwiches: deli roast beef warmed in French onion soup and Worcestershire, piled into French rolls with sautéed peppers and onions, topped with provolone and baked until melty. Serve the extra soup for dipping.

Ingredients
  

  • 1 green bell pepper thinly sliced
  • 1 medium onion thinly sliced
  • 1 tablespoon oil
  • 10.5 oz French onion soup 1 can
  • 1 tablespoon Worcestershire sauce
  • 1 pound sliced deli roast beef
  • 4 French or hoagie rolls
  • 4 slices provolone cheese

Method
 

  1. Heat the oil in a skillet over medium-high heat and sauté the bell pepper and onion until soft with browned char marks.
  2. Stir the Worcestershire into the French onion soup in a small saucepan and heat over medium until steaming and just about to boil.
  3. Turn off the heat and submerge the roast beef slices in the hot soup to soak up the flavor for a few minutes.
  4. Line a baking sheet with foil and split the rolls lengthwise, leaving the bottoms attached.
  5. Use tongs to layer the beef into each roll (drizzle with a little soup if you like), spoon on the peppers and onions, and top each with a slice of provolone cut in half.
  6. Bake at 400°F for 3-5 minutes, just until the cheese melts. Serve with the remaining soup for dipping.
