Tangy and Delicious Apple Broccoli Horseradish Slaw You Can Make in Minutes

Apple broccoli horseradish slaw is one of my go-to recipes when I’m looking to lighten up my meals. I don’t do diets, I’m not into food fads, and I will never give up meat. I think all food should be enjoyed but in moderation! That being said, sometimes my pants get a little too snug, and I know it’s time to take a closer look at what and how much I’m eating.

When I want to shed a few pounds, I often replace starchy bread or heavy sides with extra veggies. That’s where this slaw really shines! It delivers all the bold flavors of a hearty side dish but with just a fraction of the carbs.

Making the Perfect Apple Broccoli Slaw

I have learned over the years that healthy cooking does not mean sacrificing flavor. In fact, it is just the opposite! Fresh ingredients make stunning, tasty food. Try this apple broccoli horseradish slaw, and you’ll see what I’m talking about! 

Step 1: Gather the Ingredients

Start with 1 package (12 oz) of broccoli slaw. You will find it in the refrigerated area in the produce section. You will also need 1/4 of a red onion and 1 Gala apple (or other sweet apple), both cut into slivers. Throw it all into a large bowl.

Step 2: Create the Dressing

In a smaller bowl, mix up your dressing. You’ll need 1/3 cup light mayo, 2 tablespoons apple cider vinegar, and 1 1/2 tablespoons of prepared horseradish. Add in 1 1/2 teaspoons of sugar, the zest of one lemon, and 1/4 teaspoon salt. Whisk it all together so that it’s creamy and smooth.

Don’t worry about the horseradish overpowering the salad. Its potency is masked by the mayonnaise but still gives the slaw an added punch. You can probably find it in the produce section on one of those end stands next to pesto, lime juice, and mixed nuts. If it’s not there, it could be in a refrigerated section, either by specialty cheeses or ready-made pasta. 

Step 3: Combine and Chill

Now pour the dressing over the slaw mixture and stir it all together until everything is evenly coated. Make sure to toss it well so every bite is packed with flavor. Once combined, pop it in the fridge to chill until you’re ready to serve.

Letting the apple broccoli horseradish slaw sit for a bit not only makes it nice and cool but also gives the flavors a chance to meld together perfectly. Trust me, the extra time in the fridge makes it come out super tasty and even more vibrant! 

Step 4: Serve With Style

How simple was that? With the weather warming up, this would be perfect for outdoor cookouts. I often find myself putting this apple broccoli horseradish slaw beside my 3-ingredient tangy marinated chicken or a piece of baked salmon.

Doesn’t it have such vibrant colors? For that very reason, I am adding it to my Easter dinner side menu this year, along with oven-roasted Brussels sprouts and baked macaroni and cheese

But that doesn’t mean this dish can’t stand alone! Sometimes, you don’t need an elaborate meal to feel satisfied. I’ve eaten a big, flavorful bowl of this apple broccoli horseradish slaw for lunch many times, and it always hits the spot. The crisp textures, tangy dressing, and hint of sweetness from the apples make it a meal that’s as refreshing as it is filling. 

It’s also great for those busy days when you just want something quick and easy without reaching for processed snacks. Pair it with a piece of crusty multigrain bread or some cheese slices, and you’ve got yourself a light but satisfying meal that still feels indulgent.
