Do you ever get a hankerin’ for something sweet at night but don’t want to go to all the trouble of making cookies? Or do you ever need a quick dessert that you can whip up easily to take to a friend’s house? In my house, my hubby gets the late night nibbles and always wants a treat. So I oftentimes make this 3 Ingredient Chocolate Cream Pie to satisfy his sweet tooth. I have also brought it to a potluck where I was short on time but still wanted to bring something everybody would love. It’s simple. It’s plain. The chefs on Food Network would scold me for not thinking out of the box. Some will even say it’s boring. But it is undeniably finger-licking good and I promise you’ll like it!
Ingredient #1: Chocolate Cookie Crust
Start with a premade chocolate cookie crust. I try to find the Oreo brand if it is available. They usually have these in the baking aisle next to the pie fillings and chocolates.
Ingredient #2: Chocolate Pudding
Now make a batch of chocolate pudding. I mix one packet of instant chocolate pudding with 2 cups of lowfat milk and whisk it for 2 minutes. Then I let it set in the refrigerator for at least 30 minutes. I know the package says “instant”, but it really is better to leave it in as long as possible. You can also use the Cook n Serve option if you prefer that flavor; you’ll just have to wait longer.
Once set, scoop the chocolate pudding into the chocolate crust and smooth the top.
Ingredient #3: Whipped Topping
Next, scoop on some defrosted whipped topping and spread it evenly around the chocolate cream pie.
Lastly, take a small bar of chocolate and use a microplane or grater to sprinkle chocolate shavings on top. It adds a pretty decoration without a lot of fuss. I used a Reese’s peanut butter cup once and that was delicious! In this picture I used a leftover Hershey bar from my kids’ Easter candy. 🙂
Mind you, this is not a fancy pie. Don’t take it over to meet your future in-laws for the first time and don’t serve it at a party where you’re trying to impress. But if you have a group of friends you can be real with or you just want a scrumptious dessert for family night, this is the ticket! I guarantee that you’ll be licking your spoons and scraping the pie tin for the last bite.
