Some days just call for a comforting bowl of Crockpot chicken noodle soup. My day started off rough when my daughter gave herself bangs with dull scissors, my son tangled bubblegum in the cat’s fur, and my other son decorated my desk with red crayons and a Sharpie. Just when I thought it couldn’t get worse, I shattered my favorite coffee mug. Thankfully, I had a Crockpot meal planned, and a bowl of chicken noodle soup truly saved the day.

Why I Love Crockpot Meals

Crockpot meals are my go-to for hectic days because they’re easy, delicious, and require minimal effort. Unlike the chaos of life with kids, I can control the ingredients and timing. This Crockpot chicken noodle soup recipe brings warmth and comfort, and it’s one of my favorite dishes to turn to when everything feels out of control.

Preparing Your Crockpot Chicken Noodle Soup Base

Creating a flavorful base is the key to a delicious Crockpot chicken noodle soup. This recipe starts with fresh vegetables and a rich broth, combining simple ingredients to deliver maximum comfort. Let’s get started with the preparation.

Step 1: Dice Your Vegetables

The most labor-intensive part of this Crockpot chicken noodle soup recipe is chopping the vegetables. Dice a small white onion, 3 celery stalks, 3 large carrots, and about 8-10 button mushrooms. For a heartier soup, keep the vegetables in larger chunks since they’ll cook down in the Crockpot.

Place the chopped vegetables into a 6-quart or larger Crockpot along with 2/3 cup of frozen peas and 2 tablespoons of butter. Add 48 ounces of low-sodium chicken broth and 4 cups of water to the mixture. Finally, drop in 4 chicken bouillon cubes to enhance the soup’s flavor.

Step 2: Add Chicken and Spices

Cut up 4 boneless, skinless chicken breasts and add them to the Crockpot along with your vegetables. Then, sprinkle in the following spices for a comforting flavor:

  • 1 tablespoon parsley
  • 1 teaspoon garlic salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika

Give everything a good stir and cover. Set your Crockpot chicken noodle soup to cook on low for 6 hours.

Step 3: Add Noodles to Complete Your Soup

When the 6-hour cooking time is up, prepare 2 cups of egg noodles according to their package directions and add them to the soup. Let the Crockpot chicken noodle soup cook together on low for another 30 minutes. The noodles will absorb some of that rich broth, making it even more flavorful.

For the best experience, serve the soup warm straight out of your slow cooker. This hearty recipe yields about 4-6 servings.

A Meal That’s as Comforting as It Is Delicious

This Crockpot chicken noodle soup is a favorite in my home because it’s chunky, flavorful, and reminiscent of comforting family meals from childhood. The spices enhance the broth so much that I could sip it on its own… it’s just that good.

Pair it with bread for an even heartier dinner. My kids love it with traditional fluffy yeast rolls or skillet cornbread with creamed corn, both perfect for dipping into the soup’s rich broth.
