Avocado and Turkey Bacon Breakfast Sandwiches

I promised y’all that January would be full of healthy recipes to help you get back on track in the New Year. What better way than to start with breakfast…the forgotten or most rushed meal of the day. I find that when I have a protein packed breakfast I am less likely to munch on unhealthy snacks throughout the day. Avocado and Turkey Bacon Breakfast Sandwiches are a delicious way to start the day and they don’t take long to make at all.

Start by cooking a small egg pan full of egg whites. Cook each side for about 2-3 minutes or until the egg whites are no longer wobbly. Remove the egg whites in the full circle and cut them into quarters.

Microwave 4 pieces of precooked turkey bacon for a minute, or just until warmed through. If you have more time, go the extra mile and make oven-cooked bacon. It tastes so much crispier and is easy to clean up. Pull apart 4 whole wheat English muffins and place them on a toaster oven sheet. If you don’t have a toaster oven, heat the regular oven to 375 degrees. Cut each piece of bacon in half and then layer both halves on the bottom half of the English muffins.

*If you want a spicy kick, try adding a bit of chipotle mayo spread.*

Place the egg white quarters and two avocado slices on each turkey bacon breakfast sandwich.

Sprinkle the avocado with salt and pepper and place half a slice of provolone cheese on top.

Put the top of the English muffin on and place the turkey bacon breakfast sandwiches in the toaster oven.

Bake then in the toaster oven or regular oven just until the cheese melts, about 3-5 minutes.

My kids love when I make these for breakfast. They say they’re getting a “Mommy McMuffin!” These are the kind of McMuffins I can get excited about because they are packed full of the protein and healthy omegas I need to keep my energy up with homeschooling these 3 little rascals. When we’re in a hurry, we eat Make-Ahead Steel Cut Oats or simple fried eggs.

Ingredients
  

  • 4 whole wheat English muffins cut in half
  • 4-6 pieces cooked turkey bacon
  • 1 avocado cut in slices
  • 1 cup egg whites cooked and cut in quarters
  • 4 slices provolone cheese
  • salt and pepper to taste

Instructions
 

  • Cook egg whites and bacon according to instructions.
  • Split English muffins in half.
  • Layer turkey bacon on bottom half of English muffins.
  • Place one quarter egg whites, a few avocado slices, salt and pepper, and 1 slice cheese on top.
  • Place English muffin on top and bake in toaster oven until cheese is melted, about 3-5 minutes.
