Avocado and turkey bacon breakfast sandwiches are the perfect way to kick off a healthier New Year! I promised y’all that January would be full of healthy recipes to help you get back on track, and breakfast is the best place to start. It’s often the most rushed or even forgotten meal of the day, but it’s also the one that sets the tone for how we eat later.

I find that when I have a protein-packed breakfast, I’m much less likely to reach for unhealthy snacks throughout the day. These avocado and turkey bacon breakfast sandwiches are just what you need for busy mornings! They’re delicious, quick, and easy to make!

How to Make Avocado and Turkey Bacon Breakfast Sandwiches

These avocado and turkey bacon breakfast sandwiches are quick, healthy, and so satisfying. Perfect for busy mornings or when you need a boost of energy to start the day!

Step 1: Prepare the Egg Whites

Start by cooking a small egg pan full of egg whites over medium heat. Let them cook undisturbed for about 2-3 minutes, or until the top is set and no longer wobbly. Carefully flip the egg whites and cook for another 2 minutes on the other side. Once done, remove the cooked egg whites from the pan in their full circular shape, and slice them into quarters. These will be the perfect size to layer onto your sandwiches.

Step 2: Warm the Turkey Bacon

Place 4 pieces of precooked turkey bacon on a microwave-safe plate and heat them for about a minute, or until they are just warmed through. If you have more time, take it up a notch by cooking the bacon in the oven.

Oven-cooked bacon has a wonderful crispiness and is easy to clean up, making it worth the extra effort when you can. Either way, you’ll have delicious bacon ready for your avocado and turkey bacon breakfast sandwiches.

Step 3: Prepare the English Muffins

Pull apart 4 whole wheat English muffins and place them on a toaster oven sheet. If you don’t have a toaster oven, heat the regular oven to 375 degrees. Cut each piece of bacon in half and then layer both halves on the bottom half of the English muffins.

If you want a spicy kick, try adding a bit of chipotle mayo spread.

Step 4: Add the Egg Whites and Avocado

Take the egg white quarters you prepared earlier and layer them evenly onto the turkey bacon on each English muffin. Next, add two creamy slices of ripe avocado to each sandwich. The combination of protein from the eggs and healthy fats from the avocado makes these avocado and turkey bacon breakfast sandwiches both satisfying and energizing.

Step 5: Sprinkle and Top with Cheese

Lightly sprinkle the avocado slices with a pinch of salt and freshly cracked pepper to enhance their flavor. Then, place half a slice of provolone cheese over the top. The cheese will melt perfectly in the next step, tying all the ingredients together into a delicious and hearty breakfast sandwich.

Step 6: Bake Until the Cheese Melts

Put the top of the English muffin on and place the avocado and turkey bacon breakfast sandwiches in the toaster oven. Bake them in the toaster oven or regular oven just until the cheese melts, about 3-5 minutes.

A Breakfast the Whole Family Will Love

My kids love when I make these avocado and turkey bacon breakfast sandwiches for breakfast. They say they’re getting a “Mommy McMuffin!” These are the kind of McMuffins I can get excited about because they are packed full of the protein and healthy omegas I need to keep my energy up with homeschooling these 3 little rascals. When we’re in a hurry, we eat make-ahead steel cut oats or simple fried eggs.
