Easter is such a fun and colorful time of year! It is especially fun to see the excitement of the holiday unravel through the eyes of my children. When I pulled out the M&Ms and marshmallows to make these Easter M&M Rice Krispie Treats, the kids ran for their stepping stools so they could help me in the kitchen. This is an easy, hands-on recipe that even toddlers can help with.
Melt a stick of butter with a regular size package of marshmallows.
Stir it until smooth and add 1 tsp of vanilla.
Combine the marshmallows with 6 cups of rice cereal.
Add in a 12 oz package of your favorite M&Ms. I chose the pastel colors to make them special for Easter.
Spray the pan and the back of a spatula with cooking spray and press the rice cereal mixture flat in a 13×9 pan. You can also put wax paper underneath, spilling out of the sides so that it will be easier to pull out once it is hardened.
This is a good time to let your kid lick the spoon! My kids love to sit on the counter and help me with recipes. Sometimes it can seem a bit obtrusive to let them help (and a lot more messy), but it is a great relationship-building and learning time. If you have small children, I encourage you to let them help (or just watch). It teaches them how food is made, how to measure, how to count and divide, how to be patient (while something cooks or cools), and it fosters their creativity.
Let the rice krispie treats sit for an hour or two. I like to make them in the morning and serve in the evening so they have the whole day to harden. Joshua must have asked me 14 times when they would be ready!
After a couple hours, cut the treats with a sharp knife and serve them up! These will go fast, I promise! Wouldn’t it be fun to put these on the dessert table for Easter or take to your kid’s school party? Some other fun dessert/treat ideas you can make with your kids are my 13 Minute Almond Joy Cookies or 5 Ingredient M&M Peanut Butter Bars. My kids told me the Easter Bunny likes sweet treats so I better leave some out next weekend!
