Shredded Hashbrown Cheesy Potatoes Recipe

Is there such a thing as Christmas on a fork? Why yes, yes there is, and it comes in the form of shredded hashbrown cheesy potatoes. Every time I smell these cooking, I am immediately taken back to playing Super Mario Bros on the big blue couch with my sisters while my mom made Christmas dinner in the kitchen. My dad fired up the grill (because Christmas in California is rarely anything but sunny and warm) to bbq Tri-tip while my mom made green beans, rolls, and shrimp cocktail. But the dinner was not complete until the cheesy potatoes came out of the oven! These things are a masterpiece! Seriously. They go great with any meat. I eat them for breakfast. Heck, I’ll even eat them for dessert! 

Last Friday we had our Sunday School Christmas party and I decided to take these as a side dish. We had a wonderful time laughing, playing games, and of course eating good food. Here we are being silly.

So how do you make these glorious shredded hashbrown cheesy potatoes? I’m glad you asked! It is so simple and fast your cat could do it. Healthy it is not, but fast, yes. We’ll think about the healthy part on January 2nd, ok?

First, dump a bag of frozen shredded hashbrowns into a bowl. Make sure they are the shredded kind and not the cubes.

Add a can of cream of chicken soup.

Third, dump in 2 cups (16 oz) of medium to sharp cheddar cheese and 1/2 cup of diced onions.

Mix in 3/4 cup of light sour cream.

Fifth, pour in 1/4 cup of melted butter and stir it all together. Make sure all the hashbrowns are coated.

Put them into a greased baking dish.

Top with a few diced green onions, salt, and cracked pepper. Then bake in the oven at 350 for an hour.

Oh my goodness, I am drooling right now. I just ate these on Friday and I already want some more! My friends gobbled them up and I’m pretty sure yours will too!

I think these go best with Lawry’s Marinated Grilled Steak or Crockpot Baby-back Ribs. But sometimes I go the breakfast casserole route and in that case I serve these cheesy potatoes with Easy Clean-up Oven Cooked Bacon and Extra Fluffy Blueberry Muffins. Ingredients
  

  • 1 package frozen shredded hashbrowns
  • 1 can cream of chicken soup
  • 2 cups sharp cheddar cheese
  • 1/2 cup diced onion
  • 3/4 cup light sour cream
  • 1/4 cup melted butter
  • green onions salt and pepper for topping

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix all ingredients together.
  • Pour into greased baking dish.
  • Top with green onions, salt and pepper.
  • Bake for 1 hour or until potatoes are tender.
