Summer is upon us! That means it’s time for BBQs, pool parties, salads, and iced tea! It also means it’s time for chips and spicy queso dip! This cheese sauce is so easy to make and it only takes 3 ingredients. There really is no reason why you can’t take it out to the pool real quick, bring it for a big potluck, or serve to your hungry teenagers and all their friends.
Chop up 16 oz of Velveeta cheese into cubes. I used the reduced-fat version but you can use any type. It is important to cut into cubes because it allows the cheese to melt more easily over the stove. More surface area=quicker melting time.
Now grab a can of Rotel diced tomatoes. I like the kind with green chiles because it adds an extra kick.
Melt the cheese and tomatoes over the stove in a medium sauce pan. Use medium heat so that the cheese doesn’t burn and stir constantly.
Add in a couple squirts of Tapatio, maybe about a teaspoon or so. Stir it throughout the cheese.
Now pour the spicy queso dip into the serving bowl you want to use and break open the chips!
I usually make this dip when my hubby has his friends over to watch the football game. I always make sure I have at least 3 bags of chips when the guys come over because the dip is such a hit. This is also great to take poolside, to a potluck, or even pour over hot dogs and nachos. If you would like to keep it warm for serving, pour it in a Crockpot and turn the setting to warm.

3 Ingredient Spicy Queso Dip
Ingredients
- 16 oz Velveeta cheese cubed
- 1 can of Rotel diced tomatoes with chiles
- 1 teaspoon Tapatio
Instructions
- Pour cheese and tomatoes in a medium sauce pan and heat over medium heat.
- Stir continually so the cheese doesn't burn.
- Add in the Tapatio.
- Pour into dipping bowl and serve.
