This recipe works great with fresh, ripe peaches or peaches from a can. I have even combined the two.

Fresh peaches: Slice about 6-8 ripe, juicy peaches, making sure to remove the skin and pits. Fresh peaches give the cobbler a vibrant, natural sweetness that’s hard to beat.
Canned peaches: Use 2 standard 15 oz cans of peaches, thoroughly drained of their syrup. Canned peaches are a convenient option and work just as well if fresh ones aren’t available.
Basically, you’ll need about 4 cups of peaches total for this recipe to get that perfect fruity base.
In a medium-sized bowl, toss the peach slices with 3/4 cup of brown sugar and 2 teaspoons of cinnamon until every piece is coated evenly. This step ensures that the flavors meld beautifully as they cook.

Step 2: Get a Little Cakey

Pull out some pretty ramekins or small bowls of some kind. Why small, you ask? Because this peach cobbler is so addicting, it requires a lot of restraint to keep from eating it all!

While it’s nice and warm, scoop on some vanilla ice cream and watch it melt into the cracks. Oh man, I wish there were smell-o-vision and taste-a-vision on the computer because this peach cobbler is to die for!

I love how the heat from the cobbler meets the cold of the ice cream and melts in my mouth! This has got to be one of the most down-home comfort foods ever created!
